Carrots also contain a lot of available water i.e. up to 90% and fibers which are highly beneficial to improve the gut health. Calcium pectate a calcium polymer of pectic acid is also a very important component to improve the health and fitness of our gastrointestinal tract. Apart from this carrots also contain, in smaller amounts, essential oils, carbohydrates and nitrogenous composites.
In totality carrot can form an important component of our diet in raw as well as in the various cooked forms.
